Let Your Blender Make Your Soup!

When you make soup in a Blendtec or Vitamix blender you pulverize the raw vegetables instead of cooking them down so you retain all the vitamins and nutrients. Soups are filling and very low calorie, therefore they are great for weight loss and super heart healthy!

Blendtec ($377 at Amazon) and Vitamix ($398 at Amazon)  are super blenders most people use to make Green Smoothies.  (I use a Blantec but I think Vitamix is just as good.)

The book reports, “This recipe was created at a 2002 Raw Chef’s Training Retreat by Victoria Boutenko. This soup was such a hit-the students were scraping the bowl and begging for the recipe!”
  • 10 to 11 fresh Roma tomatoes, chopped
  • 1/2 red or yellow onion, peeled and chopped
  • 4 cloves garlic, peeled
  • fresh basil to taste
  • fresh dill to taste
  • 2 tablespoons fresh-squeezed lemon juice
  • Celtic sea salt to taste
  • 2 tablespoons olive oil
  • 1/8 to 1/4 cup raisins
  • 1 to 2 red bell peppers
  • 1/4 jalapeno pepper (optional) (i used habenero because i love spicy!)
  • 1 cup sun-dried tomatoes, finely chopped then divided
  • 1 avacado cubed
  • 1 ear of corn cut from the cob
  • 1/2 sweet yellow pepper
  • finely chopped parsley for garnish

In a blender combine 6 of the tomatoes with the onion, garlic, basil, dill, lemon juice, sea salt, olive oil, raisins, red bell pepper, jalapeno, and 1/2 cup water. Blend well.

Add 1/2 cup of the sun dried tomatoes, a little at a time. Blend well.

In a large bowl, combine the avocado, remaining fresh and dried tomatoes, corn and the sweet yellow pepper. Pour the blended mixture over the chopped veggies and stir well. Garnish with parsley.

Creamy Tomato Soup w/ Crostini 053109Creamy Tomato-Carrot Soup

  • 1 whole carrot
  • 2-3 whole plum tomatoes
  • 1-2 stalks of celery
  • 1 piece of cabbage (about 4 inch x 1 inch)
  • 1/4  red or white onion
  • 1/2 clove garlic
  • 1/4 to 1/2 packet Taco seasoning (or your spices)
  • Sea salt and pepper to taste.
  • 1 can coconut milk
  • 1/2 cup hot water

Add ingredients to the blender in order listed and blend on high for about 90 seconds or until blended to a smooth consistency. If you have a Blendtec blender, use the “Soups” button, it will make it warm. If needed heat before serving.

Creamy Butternut Squash Soup

butternut squash soup & harvest salad - 10/21/09This is my new FAVORITE soup! Only the squash is cooked the remaining ingredients are blended raw.

  • 1 butternut squash (sold already diced and bagged in many produced departments.)
  • 1 large onion
  • 1 ripe tomato
  • 1 clove garlic
  • 1 can vegetable stock
  • 1 can coconut milk
  • 1-2 teaspoons curry powder
  • 1/4 teaspoon cayenne pepper (optional, or more, to taste)
  • salt and pepper to taste
  • 2-3 teaspoons fresh lemon juice
  • 2-3 tablespoons olive oil
If you use pre-diced squash – toss squash with olive oil and roast at 400 until tender (15 min or so).
If you use a whole squash, spread about 1 tablespoon vegetable oil on the bottom of a roasting tray and place the squash halves cut side-down on the tray. Roast for about 30 minutes. Flip over and let cool. Once cool enough to handle, scoop out all the flesh.
Add the other ingredients to the blender and blend on high for about 90 seconds or until blended to a smooth consistency. If you have a Blendtec blender, use the “Soups” button. Add squash and hit pulse until desired consistency. If needed heat before serving.

Optional ideas:

  1. Add some rice or black beans when blending is complete.
  2. For  chunkier soup add additional diced tomato, celery, or whatever vegetables you have on hand.

Cream of spinach and pea soupGreen Spinach Soup

  • 3 cups pure water or vegetable broth
  • 3 avocados
  • 1 red bell pepper
  • ½ bunch organic Spinach
  • 2 Small lemons
  • Sea salt and pepper to taste

Add ingredients to the blender in order listed and blend on high for about 90 seconds or until blended to a smooth consistency. If you have a Blendtec blender, use the “Soups” button, it will make it warm. If needed heat before serving.

beet soupBeet Soup

  • 2 cups of water or vegetable broth
  • 1 beetroot  (use the leaves too- the most nutritious part)
  • 1 carrot
  • 1 tomato
  • 3 strawberries (optional)
  • 1 spring onion (optional)

Add ingredients to the blender in order listed and blend on high for about 90 seconds or until blended to a smooth consistency. If you have a Blendtec blender, use the “Soups” button, it will make it warm. If needed, add water to desired consistency. If needed heat before serving.

Taco Soup

Lunch @ Europa Cafe

Ingredients

  • 1 can of vegetable broth
  • 2  Roma Tomatoes
  • 1 small stalk celery
  • 1  carrot
  • 2 tbsp Taco Seasoning (or your own spices)
  • 1/2 can  corn
  • 1/2 can red kidney beans
  • Large handful tortilla chips (optional skip on Daniel Fast)

Add everything except the corn,  beans and chips to the blender in order listed and blend on high for about 90 seconds or until blended to a smooth consistency. If you have a Blendtec blender, use the “Soups” button, it will make it warm. After blending add corn and beans.  Lightly crush and add chips. If needed heat before serving.
