Healthy Delicious Muffins

Being prepared is critical to eating healthy. So, I am baking batches of wheat free, fruit, nut muffins on Sundays to have during the week.

Just look at these photos, is your mouth watering? They may look like those ladened with sugar and fat heart-attack-waiting-to-happen muffins but they are full of wonderful healthy, good-for-you,  ingredients like lintels, chia seeds, sweet potatoes, fruits and nuts.

Blueberry Almond Crumb Muffins


  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 6 eggs
  • 1/2 cup honey
  • 3/4 teaspoon vanilla
  • 1/2 teaspoon unrefined sea salt
  • 1 cup blueberries
  • 1 tablespoon butter
  • coconut oil or butter (to grease muffin pan)

Apple Lintel Muffins

Note: I buy lintels by the bag and ground into flour for some recipes. This one calls for cooked lintels.


  • 1 1/4 cups white whole wheat flour
  • 1/2 cup rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon (you could also add some ground nutmeg and ginger here – perhaps 1/4 teaspoon of each)
  • 1/3 cup packed brown sugar
  • 1 cup cooked lentils
  • 1 sweet potato
  • 1 peeled chopped apple
  • 1 pureed apple with peel intact
  • 1 cup nonfat milk

Make Ahead Magic Muffins

  • 1 cup whole grain oat flour
  • 1/2 cup whole grain barley flour
  • 1/2 cup whole grain brown rice flour
  • 2 tablespoons ground chia seeds
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup low-fat buttermilk*
  • 1/2 cup water
  • 2 teaspoons vanilla extract
  • 1/3 cup honey
  • fruits, nuts, additional flavors**
