Dr Axe, introduced me to Dr. Fuhrman’s nutrient information and eating style that will allow you to shed pounds while you reverse existing diseases and protect yourself from future health problems.

I use Dr Fuhrman nutrient chart to choose the most nutritious foods to put into smoothies. 1000 being the most nutritious. Notice it takes 5 cups of strawberries to equal 1 cup of kale and 20 cups of oatmeal to equal 1 cup of kale.

I don’t like kale but you can’t taste it in a delicious Green Smoothie so I put kale into every smoothie.

Dr. Fuhrman‘s MANDI food and meal scoring system (patent pending) lets you know exactly how healthy your diet is. You can choose your own level of nutritional excellence and you can move forward to a higher level at your own pace when you are ready or you can pump it up to phase four to get maximal weight loss and therapeutic effect to reverse disease. High Nutrient Food, Not Drugs, Is The Prescription

Plant foods like garlic, carrots, tomatoes, sweet potatoes, broccoli, and dark leafy greens like kale (or mustard or turnip greens) pack a nutritious phytonutrient wallop.

Fuhrman made the following chart so you can choose the food with the highest nutrition value.

Nutritious Leafy Green Vegetable Soup Base

You need a powerful blender like a Blentex or Vitamaix to blend leafy greens into liquid. I blend greens (kale, cabbage, spinach, Bok choy, dandelion etc), broccoli, and cauliflower as a soup base.

I usually add chopped garlic, onion, celery, and carrots to almost any soup to make it more nutritious and hardy. I make a huge pot and freeze batches.

To get the most from all the nutrient-dense foods added to your healthy soup, try simmering slowly on your stove top on low heat, avoiding boiling. High heats will destroy your soups nourishing potential.

Forget Ham Use Smoked Turkey

Do you add ham to bean soups? I make slit pea soup and bean soups with a smoked turkey leg instead of ham (read why you NEVER eat pork here). The turkey falls off the bone and taste just like ham (pork doesn’t have much flavor anyway its the smoking that has the flavor). I have served this to company many times and its always a huge hit.

In this video Dr. Joel Fuhrman gives more ideas for nutritious soups.

I make a huge pot of quinoa (pronounced Keen-wah) each week and keep it in the fridge as a base to add to three or four times a week. You can use it like you would pasta or rice, but it is more nutritious. You can add different ingredients such as feta, chicken, fish or different vegetables to change it up. For a quick lunch I add tomato and avocado. At the end of this post is my favorite veggy packed quinoa recipe. (If you had quinoa and it was bitter–it was not rinsed well. You can buy pre-rinsed quinoa in a box on your rice isle in any grocery store).

While quinoa is usually considered to be a whole grain, it is actually a seed, but can be prepared like whole grains such as rice, couscous, barley–but MUCH healthier. 1/3 cup of cooked quinoa has 160 calories, 2.5 grams of fat, 3 grams of fiber and 6 grams of protein.

Quinoa is a packed with protein: It contains all essential amino acids making it a complete protein. One cup of quinoa has about as much protein as two deli slices of chicken breast.

Quinoa’s high magnesium content promotes cardiovascular health. One serving of quinoa contains 48% of daily magnesium requirements.

Quinoa can help reduce cholesterol.

Quinoa is quick and easy: it can be cooked in less than 12 minutes

Quinoa is delicious and versatile. Use it like any rice dish, casseroles, deserts, breakfasts, and more.

Quinoa promotes healthy bone growth: Quinoa contains all nine essential amino acids used by the body as building blocks for the development of muscle tissue and necessary metabolic enzymes.

Quinoa can help prevent gallstones.

I’m a big fan of make ahead recipes. Last week I made “Salad in a Jar”. I was please with the results. Today I tried the Oatmeal in a Jar also called Refrigerator Oatmeal.

Update: I love having breakfast ready when I wake up. I make these every week now! I use 1/2 pint jelly jars for individual servings.

This is a super healthy breakfast. I made 5 pint jars of oatmeal in about 20 minutes and now I have yummy nutritious breakfast for the next five days (and no new messes!).

Gather Your Ingredients & Jars

5 or 6 pint-sized jars (half pints for single servings, adjust accordingly)

Oatmeal: I use slightly cooked Steak Cut Oatmeal. You can also use uncooked Old Fashion Oatmeal

Sweetener: I used Steiva

Fruit: I use apples, mango, dried cherries

Nuts: I used pecans

Yogurt: I used Greek Vanilla (high in protein, calcium)

Milk: I used Almond Milk (Coconut works well too).

Chia Seeds(Super food- of fiber, omega-3 fatty acids, antioxidants, vitamins, and minerals, a complete protein, 6 g of fiber per T.)

Hemp Hearts (power food- a complete protein, more Omega 3 Essential Fats than any fish, 1 g. fiber per T)

Cinnamon ( teaspoon of cinnamon contains 28 mg of calcium, almost one mg of iron, over a gram of fiber, and quite a lot of vitamins C, K, and manganese)

Slightly Cook Steal Cut Oatmeal

Steel cut oats are healthier than rolled oats. While rolled oats are steamed, rolled, re-steamed and toasted, steel cut oats do not go through this additional processing that cause them to lose flavor. Steel cut oats maintain their natural flavor and texture.

Bring oats, water and salt to boil an simmer 3 to 5 minutes. Normally you cook it 30 minutes.

4 cups water

1 2/3 cup Steal Cuts Oats

Pinch Salt

Oatmeal in a Jar Recipe

I found several recipes online an adapted a few to make mine. There are so many items you can add to this recipe: dried coconut, granola, dried fruits, ground flax seed, honey, figs, Nutella, etc.
(I was surprised how many people use sugar. It’s just a shame to add sugar to such a healthy recipe.)

Layer Ingredients into the Jars

1/2 cup steal cut oatmeal (cook according to direction above) or 1/2 raw Old Fashioned Oatmeal

1/4- 1/3 cup Greek yogurt

1/4- 1/2 milk (almond or coconut)

1/2 teaspoon cinnamon

1/2 teaspoon chi seeds

1 Tablespoon Hemp Hearts

Handful of fruit (apples, mangoes, raisins, strawberries, blueberries, etc)

Handful of nuts (pecans, walnuts, pine nuts, almonds, etc.)

Sweetener (1/2 to 2 teaspoons Steiva or honey or maple syrup or agave nectar)

If you aren’t sure how much sweetener to use wait until you taste it the next day to add sweeter.

Seal the jar and shake. Store in the refrigerator for at least 8 hours. The next morning you can et the oatmeal chilled or heat until warm.

I made 2 jars mango and pecans, 2 jars with apples and pecans and 1 jar with dried cherries and pecans. I had some apple and mango chunks left over and ate them with yogurt for a snack.

Number of Servings?

Use pint jars for one or two adult servings. If you are serving little ones a pint could feed several toddlers. Make quart jars for family size.

This is so full of fiber it is an excellent food for weight loss.

Nutritional Values

Approximate Calories: 230, Fat: 3.9g, Carbs: 37.4g, Protein: 12.6g per cup.

Adults need to try to eat 25 to 30 grams of fiber each day. (If you can eat this much fiber daily no calorie-counting required to lose weight.

What’s your favorite oatmeal ingredient?

I recently started Weight Watchers. I panicked at dinner time when I realised I only had 7 points left.

I made turkey ham, lima beans and mac and cheese for the family. The added up the points (mac and cheese alone is 11 points!). I had to make some quick adjustments. I grabbed the some veggies to go with the turkey ham and lima beans.

I made a salad with the ham, lettuce, lima beans, Roma tomatoes and added a one slice of reduced fat swiss cheese.

But wait! What about the dressing?

I put an orange, 1/2 an avocado and some vinegar in the blender and made a yummy dressing. I used 2 Tablespoons so its 1 point.

Dinner for Six Points!

Now what will I have the remaining point for dessert?
