Delicious Bean Soup

In the winter time we eat this dish about once a week for lunch or dinner. It’s my hubby’s favorite I keep several containers on hand in the freezer. It is also one of my Dad’s favorite meals. It’s the first thing I fix when I know he is coming to visit. A few drops of vinegar in a bowl gives it a wonderful flavor.


  • 1 package 16 Bean Soup (found packaged in 1 lb bag in grocery isle near other dry beans)
  • 3 bay leaves
  • 2 tablespoon Mrs Dash
  • 1 teaspoon chili seasoning
  • 2 cans chicken stock
  • Additional water needed to cover 2 inches
  • 3 stalks celery chopped
  • 3 carrots diced
  • 1 large onion chopped
  • 3 cloves garlic diced
  • 1 smoked turkey leg*
  • 2 cans diced tomatoes


Soak the beans overnigh in water. Drain and rinse well (rinsing helps with gas).

Combine first six ingredients (liquid should cover beans 2 inches) in large pot. Cover and cook on HIGH for 3 hours, or until beans are tender. Add remaining ingredients and turn to low temperature to low; cook for additional 3 to 4 hours.Remove turkey bones. Meat should fall off easily.

Serve as complete meal or over rice. We like it with cornbread (and add a few drops of vinegar to each bowl).

* We don’t eat pork. I have served this dish many times and everyone things the meat is ham. Pork doesn’t really have much taste. The taste comes from the smoked flavor. I use smoked turkey in many dishes.

    I thought you had to soak and rinse dry beans before cooking them. Your recipe doesn’t say that-sounds easy, where did you find the smoked turkey legs? I don’t think I’ve ever seen them in the grocery store before. Love your new site! Thanks for all your inspiration!! I thank God for bringing you/your life into mine!

    I added the soak directions (sorry, I wrote this post twice,, lost the first one and forgot the soaking).

    I get turkey legs at Sams or Krogers. If you don’t see them at the store ask the butcher. Last time I went to Kroger I asked and the butcher brought ourt two from the back.

    Robin, Thanks SO much! I was praying they would be in store by me! I have access to both a Sams and a Krogers! I purchased my beans just yesterday and can’t wait to try this soup! My husband doesn’t like ‘soups’ but does like ‘chili’-and your bean ‘soup’ recipe sounds thick like chili w/addes tomatoes, etc. Sounds yummy! Thanks again for sharing and letting God use you……

    I love this recipe. I’ve practically been on a bean soup diet since my fiancee found it. She kids me about it. I make the soup every couple of weeks and have it for lunch or dinner practically every day when I’m not traveling. Preparation is easy with a crock pot, and it freezes well and reheats wonderfully in a microwave. Ingredients are healthy, high in protein and low in fat, perfect for the diet I try to follow. What could be better?

    My fiancee and I prepared a vegetarian version with vegetable stock and Quorn (fake) turkey, and it was also very good, but I stick to the recipe for myself.

    I find the smoked turkey legs at Publix. A little pepperjack cheese on top before the microwave is very tasty.
