Do You Eat this Super Food?

Parsley is a storehouse of synergistic nutrients that rejuvenate and detoxify  the body.

I love adding parsley to my green smoothies. Nothing taste as fresh as a parsley smoothie.   I planted a lot of parsley this year. While waiting for a harvest I purchase organic parsley at Wholefoods. It’s very cheap under $2 for a large bunch.

Packed with Nutrients

  • Vitamin K: is necessary for bones to get the  minerals they need to form properly. Parsley is loaded with vitamin K (180 mcg  per 1/2 cup).
  • Vitamin C: Parsley contains more C than any other standard culinary vegetable, with 166mg per
    100g (4oz). This is three times as much as oranges and about the same as blackcurrants. The high content of vitamin C assists the absorption of the valuable quantity of iron.
  • Iron: One ounce of parsley has a whopping 84
    percent of iron
    (based on a  standard 2,000 calorie diet) with 5.5mg per100g (4oz)
  • Folic Acid; Parsley is a good source of folic acid, one of the most important B
    vitamins.
  • Magnesium: Good source of manganese (2.7mg per 100g)
  • Calcium: Good source of calcium (245mg per 100g).
  • Potassium: Exceptionally high in potassium, with one whole gram of potassium in 100g (4oz)

Studies show parsley to be effective in detoxifying the cells.

  • Strengths the kidneys
  • Slows aging process
  • Reduces depression
  • Lowers cholesterol

According to the American Institute for Cancer Research, fresh parsley delivers:

  • Vitamin C and vitamin K
  • Natural plant compounds such as flavonoids and limonene
  • Volatile oils and potent antioxidants that benefit digestion
  • Carotenoids such as beta-carotene and lutein

Note: pregnant women should avoid excessive amounts of parsley.
The two most popular types of parsley are curly parsley and Italian flat leaf parsley. The Italian variety has a more fragrant and less bitter taste than the curly variety. Fresh parsley should be kept in the refrigerator in a plastic bag.

    I don’t use parsley in my juices, but I do use Cilantro which is in the same family and has the same nutritional values. The difference between Parsley and Cilantro is that cilantro has a pleasantly sweet taste.

    Although I did read yesterday that some people are genetically wired in such a way that makes Cilantro taste like soap to them.

    Cilantro is also specifically known for its heavy metal detoxification properties.

  5. I’m one of those people that can’t stand cilantro– funny all my children love it. If its in the kitchen I can’t eat. Made me feel better to find out I’m not alone. :)

    In the UK, we call cilantro coriander. I have it growing in my herb bed, and yes I sometimes think it tastes a bit soapy, I thought that was just me being weird.
