How to Roast Garlic with Vegetables

I roast root vegetables (sweet potatoes, potatoes, carrots) with rosemary (from my garden!) at least twice a week. I recently started adding roasted garlic. I slip foil covered garlic in the corner of the roasting panto roast garlic. When the dish is finished baking, squeeze the roasted garlic onto vegetables, stir and serve.
