Brunch Egg Bake

I modified this recipe I found at AllRecipes this morning.

It was a big hit (creating it and eating it). No photos as I misplaced my camera. :-(

I used make something similar and lost the recipe. This works great and is a keeper.

Ingredients:
5 cups shredded Cheddar cheese
1  medium onion
2 tablespoons butter or margarine
2 cups diced fully cooked Turkey ham
8 eggs
1 3/4 cups milk
1/2 cup all-purpose flour
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Place 3 cups of cheese in an ungreased 13-in. x 9-in. x 2-in. baking dish and set aside. In a medium skillet, saute onions  in butter until tender; drain. Place over cheese; top with turkey ham. Sprinkle with remaining cheese. In a bowl, beat eggs. Add milk, flour, parsley, basil, salt and pepper; mix well. Slowly pour over the cheese. Bake at 350 degrees F for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 10 minutes before cutting.

My modifications: I used Turkey ham, regular onion and no parsley or mozzarella because I didn’t have any of them on hand.

Come to think of it most my family’s favorites are from modified recipes made because I didn’t have all the  ingredients on hand.

    We have our own chickens, so I can really use recipes like this that call for lots of eggs. Think I’ll be using mozzerella though, since we make our own. ;) Thanks Robin!

    Oh, Robin, this sounds so yummy. I think we’ll have this for dinner tonight. I’m a recipe modifier, too. I rarely have all the ingredients called for. :-)
