I've practically been on a bean soup diet since my fiancee found it. She kids me about it. I make the soup every couple of weeks and have it for lunch or dinner practically every day when I'm not traveling. Preparation is easy with a crock pot, and it freezes well and reheats wonderfully in a microwave. Ingredients are healthy, high in protein and low in fat, perfect for the diet I try to follow. What could be better? My fiancee and I prepared a vegetarian version with vegetable stock and Quorn (fake) turkey, and it was also very good, but I stick to the recipe for myself. I love this recipe.
