Make Your Greek Salad More Nutritious

Greek SaladMake your greek salad more nutritious by adding lots of veggies. This is our family favorite salad; we have it often. The ingredients vary as to what I have on hand.

Greek Veggie Salad

The minimum is romaine lettuce, raisins, and feta. Everything else is optional.

No cooking unless you decide to add the asparagus. To make a full meal, just add 2 cut up organic cooked chicken breasts (roasted is best).

Mix in a large bowl:

  • 1 head romaine lettuce
  • 1 can garbanzo beans (chick peas) fully rinsed
  • 1/4 cup raisins
  • 1/3 cup pine nuts
  • tomatoes
  • 8 oz. Feta cheese, crumbled (or cut in cubes)
  • 1/2 cup chopped broccoli
  • 1/2 cup chopped cauliflower
  • 1/4 celery
  • 1 cup asparagus (first parboiled for two minutes and cooled)

Invisible Dressing

DIY Good Seasonings Kraft Italian Dressing Mix

This is an Italian dressing my son has called “the invisible dressing” since he was 3. I’ve made this for 30 years. The red wine vinegar makes a world of difference.


  • 1 Cup Olive Oil
  • ¾ Cup Red Wine Vinegar
  • 1 Packet Good Seasonings Dressing Mix or make your own:
    • 1 tbls. garlic salt
    • 1 tbls. onion powder
    • Sprinkle of Steiva
    • 2 tbls. oregano
    • 1 tsp. pepper
    • 1/4 tsp. thyme
    • 1 tsp. basil
    • 1 tbls. parsley
    • 1/4 tsp. celery salt
    • 2 tbls. salt
Combine all ingredients and shake until ingredients are well incorporated. Shake well before each use.  Keep refrigerated.  Allow it to refrigerate for 24 hours to let the flavors come together.
