Coconut oil is perfect for sauteing vegetables and aromatics, especially onions. They absorb the sweetness of the oil and pass its lovely subtle flavor on to the whole dish. I cook almost everything with it, from eggs to cakes, especially since I found out that most so-called olive oil is not really olive oil.
