Avocados are an amazing super food. They provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a “nutrient booster” by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit.

  • 2 avocados, peeled, seeded and cued
  • 1/3 cup olive oil
  • 1 clove garlic, minced
  • 1 large cucumber, peeled, seeded and cut into chunks
  • 1/4 cup lemon juice
  • salt and pepper to taste

Directions

I mix in a Blentex. You can use Vita-mix,  Magic Bullet  or  any type food processor or blender. Puree the olive oil and garlic in a blender until smooth. Add the avocado, cucumber, and lemon juice.
