Be the Branch

If you want to produce fruit remember your job is to be the branch. The branch is a growth from the main stem or root of a plant. Various Hebrew words are translated as branch or shoot. The most common one can be defined as any sprout of vegetation (Gen. 19:25; Ezek. 16:7; Ps. 85:11).

Sometimes we feel like we just can’t live the Christian life—we can’t without abiding in the Vine. It’s easy to lose focus and rely on working overtime to please God through our good works and righteous behavior but the only fruit this brings is burnout. We can’t do it in our own strength. That doesn’t mean we’re free from responsibility. We have a responsibility to submit to the Vine and the Vinedresser. The Spirit can do His work only as we yield to Him. (more…)

Mango Salsa

One year in Florida on vacation we had Mago Salsa and loved it. I found this recipe at Simply Recipes. I tweaked the original recipe to our family’s tastes. Mango Slasa I found at the grocery store it too hot for my family.

1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango)
1/2 medium red onion, finely chopped
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh lime juice
Salt and pepper to taste

Combine all of the ingredients in a bowl. Season to taste with salt and pepper. Change the tasste by adding diced avocado.

Quick and Easy Fresh Asparagus

This is my favorite vegetable. As soon as asparagus comes in season we have it a few times a week. Fresh grated Parmesan is best but canned will do. Quick, easy, healthy and delicious!

1 bunch of medium sized asparagus, about 1 lb
2 Tbsp of the extra virgin olive oil
2 Tbsp parmesan cheese
1 teaspoon lemon zest or 1/2 teaspoon lemon juice
Salt and black pepper

1 Rinse asparagus, break off any tough, white bottoms and throw away. Cut into 1 to 2 inch sections.

2 Parboil the asparagus for exactly 2 minutes. (drop in while water is t a full boil).

3. Drain the water. While the asparagus are still hot, toss them in a bowl with the olive oil, Parmesan, and lemon rind. Salt and pepper to taste. Serve warm or room temperature.
